Cook Rafi’s version of this popular restaurant curry is mixed with traditional South Indian flavours. Serve at home in as little as 30 minutes! A much-loved, family recipe that makes the perfect comfort meal.
A South Indian classic curry that's mixed with warming spices, such as mustard and peppercorns, and finished with tomatoes.
This recipe is from Chennai (formerly Madras), the capital city of Tamil Nadu, on the southeastern coast of India. We suggest the use of beef in this curry as this is more commonly eaten in the Muslim community and cuisine found in Chennai.
Chennai is where Rafi studied at a convent school. Rafi would often cook the Madras at home and it was one of her favourite recipes. Rafi’s son, Kevin, continues this tradition, cooking it regularly for his family.
Try it with: stewing beef or mince beef.

- Empty the contents of the pack into a pan with 300ml water, 400g (tin) chopped tomatoes, 1tsp sugar and simmer for 10 minutes.
- Add 1kg of ingredients of your choice. Mix well, cover and gently simmer until the ingredients are cooked.
- Season with salt, to taste and garnish with coriander leaves.

- Empty the pack into a pan with 175ml water, 200g (1/2 tin) chopped tomatoes, 1/2 tsp sugar and simmer for 10 minutes.
- Add 500g ingredients of your choice. Mix well, cover and gently simmer until the ingredients are cooked.
