Cook Rafi’s version of this side recipe at home in under 20 minutes.
An earthy side recipe - roast mushroom in a thick, spiced tomato sauce. Serve the Mushroom Bhajee as a side recipe to one of our aromatic Curry Packs like the Moghlai or Makhani.
Fresh mushrooms are not widely available in India so tinned mushrooms are mostly used. In the UK, mushrooms are a very popular ingredient.
Rafi’s son, Lee, developed this recipe to showcase how paired with simple spices a single ingredient can be the star of the recipe. In this case savoury, meaty mushroom with garam masala, onion seed and fenugreek (methi).
Serve it with: Moghlai or Makhani.

- Roast 600g of small mushrooms in a little oil and keep aside.
- Empty the contents of the pack into a pan with 300ml of water and 2 tbsp tomato puree.
- Simmer for 5 - 7 minutes, until the sauce thickens.
- Add the mushrooms and mix well.
- Season, garnish with coriander and serve.
