Rafi’s Rogan Josh is our version of this popular Kashmir recipe. This is the perfect Curry Pack to put in the slow cooker for an easy, delicious meal.
A rich, intense and velvety curry, mixed with tomatoes and spices, including black cardamom, cloves and cinnamon. This Kashmiri recipe is best cooked low and slow to enhance the deep, smoky flavours.
Rogan Josh is often associated with a bright red colour. Traditionally this was obtained from a natural dye called Ratan Jot, which is the dried root of the Alkanet plant. This could be where the name Rogan Josh comes from. Other sources suggest the name could be from ‘roghan’ - red and ‘gosht’ - meat. Tomato puree is used in Rafi’s recipe in place of the rattan jot, providing richness, depth of flavour and colour.
This kind of recipe would not usually be cooked with coconut. Yoghurt is more likely to be used to add a rich creaminess. Rafi’s addition of creamed coconut shows the influence of her South Indian heritage.
Try it with: lamb or root vegetables and chickpeas.

- Empty the contents of the pack into a pan with 300ml water and 60g coconut cream, 400g (tin) chopped tomatoes, 2 tbsp tomato puree and 1 tsp sugar. Simmer for 10 minutes.
- Add 1kg of ingredients of your choice. Mix well, cover and gently simmer until the ingredients are cooked.
- Season with salt, to taste and garnish with coriander leaves.

- Empty the pack into a pan with 175ml water and 30g coconut cream, 200g (1/2 tin) chopped tomatoes, 1 tbsp tomato puree and 1/2 tsp sugar. Simmer for 10 minutes.
- Add 500g ingredients of your choice. Mix well, cover and gently simmer until the ingredients are cooked.
- Season with salt, to taste and garnish with coriander leaves.

I've purchased this curry pack many times in recent years and my family and I find it excellent apart from two of the ingredients.
Item 1. Is a green diamond (multi sided)? Whatever it is shaped seed about 1cm long which has a really horrible and bitter taste.
Item 2. Is a black seed about 2cm long when cooked and it also has a horrible and bitter taste.
My son who does our cooking, can never seem to find these items before making the curry. Both my wife and I are disabled and unable to stand and do any cooking. So, sometimes my wife and I can manage to find most of these seeds when the curry is on our plates but the taste still lingers. In years gone by before I become disabled, my Anglo-Indian friend taught me how to make a genuine curry and these seeds were never in his curries or in mine.
Any chance to have them removed from my future orders? PLEASE!
