Chicken and Potato Homestyle Curry

This recipe features in all of Rafi’s cookbooks making it one of the oldest Curry Pack recipes that we have on the menu.

150ml water | 300ml water |
30g Creamed Coconut | 60g Creamed Coconut |
200g (1/2 tin) Tinned Tomatoes | 400g Tinned Tomatoes |
425g chicken thighs/drumsticks | 850g chicken thighs/drumsticks |
100g potatoes | 200g potatoes |

Instructions

Empty the Homestyle Curry Pack into a pan and toast off the spices on a low/medium heat for 5 minutes.

Add water and creamed coconut to the pan and stir. Cook until the coconut is dissolved.

Once dissolved, add the chicken and stir gently. Cook on a gentle simmer with the lid on for 10 - 15 minutes.

The curry might look a little dry at this stage, but a lot of moisture will release from the chicken, creating a wonderfully rich sauce.

Add in the potatoes and tinned tomatoes then stir, cover and cook for another 10 - 15 minutes.

Check if the chicken is cooked. Cook for another 30 - 45 minutes on a low heat (if desired) to add more richness to this dish.

Season with salt and garnish with some fresh coriander. Ready to serve, enjoy!
