Chilli Sambal

Introduction
This quick and easy chilli sambal recipe is a spicy condiment made from ground chilli peppers. It's a key ingredient in many Southeast Asian dishes.
This hot relish is perfect to brighten up and add a strong flavour to any meal - it even goes great on burgers!
Other dried chillies will work well with this, all affecting the final flavour and heat strength of the sauce. Try using chipotles for a Mexican-style sauce, or habanero for a more Caribbean influence.
Ingredients
Makes 1 jar |
20g dried red chillies (soaked in 150ml of just-boiled water for 10 minutes) |
2 garlic cloves (peeled) |
2 fresh red chillies (stalks removed) |
4 tsp white wine vinegar |
2 tsp salt |
4 tsp sugar |
Instructions
1. Blend all the ingredients together, including the water used to soak the chillies.
2. Adjust to taste, adding more salt, sugar or garlic.
