Rafi's Courgette Bhajis Recipe

Serves: 4 - 6 | Suitable for vegetarians

Introduction

Make this fresh and tasty alternative to the classic onion bhajia at home with our Bhajia Pack. Courgettes are a great ingredient for Bhajias as they take on a lot of flavour from the spices in the Bhajia mix and add a splash of colour to this delicious starter/side dish.

You could also follow this recipe with carrots for another delicious alternative to classic onion bhajias. After all, what would a curry night be without some bhajias? 

Ingredients

 Serves 4 - 6

Rafi's Bhajia Pack
2 medium courgettes
125ml water
Chopped coriander leaves 
Oil (enough to shallow or deep fry)
Salt to taste


Cooking Instructions

  1. Coarsely grate the courgettes, sprinkle them with salt and leave for 20 minutes.
  2. Wrap them in a clean cloth and squeeze out as much water as you can.
  3. Then, as per the instructions on the Bhajia Pack, mix the courgette with 125ml water and a handful of coriander, and either deep or shallow fry in oil until brown and crispy.
