Courgette Bhajias

Introduction
Make this fresh and tasty alternative to the classic onion bhajia at home with our Bhajia Pack. Courgettes are a great ingredient for Bhajias as they take on a lot of flavour from the spices in the Bhajia mix and add a splash of colour to this delicious starter/side dish.

Serves 4 - 6 |
Rafi's Bhajia Pack |
2 medium courgettes |
125ml water |
Chopped coriander leaves |
Oil (enough to shallow or deep fry) |
Salt to taste |
Cooking Instructions
- Coarsely grate the courgettes, sprinkle them with salt and leave for 20 minutes.
- Wrap them in a clean cloth and squeeze out as much water as you can.
- Then, as per the instructions on the Bhajia Pack, mix the courgette with 125ml water and a handful of coriander, and either deep or shallow fry in oil until brown and crispy.
