Crushed Spiced Peas
A twist on a classic vegetable

Introduction
This recipe is perfect for when fresh garden peas are in season, but you can use frozen
peas at any time. A fresh summery recipe, it is great served with fishcakes.
Ingredients
Serves 4 |
2 tbsp oil |
10 fresh curry leaves ( finely sliced) |
1/2 tsp Mustard Seeds |
1/2 tsp Onion Seeds |
Salt to taste |
500g peas |
Large handful of fresh mint |
Large handful of fresh coriander |
Instructions
- Heat the oil in a small frying pan. Add the mustard seeds, onion seeds and curry leaves. Cook for 2-3 minutes until the curry leaves have crisped up and the mustard seeds have started to pop.
- Add the peas to the pan. Keep stirring until cooked to your liking.
- Depending on the desired consistency you can either gently crush some of the peas with the back of a spoon, or blitz with a stick-blender, or leave the peas whole.
- In a bowl, mix the peas with the mint and coriander.
Season with salt to taste before serving.
