Crushed Spiced Peas

Serves: 4 | Suitable for vegetarians 

Introduction

This recipe is perfect for when fresh garden peas are in season, but you can use frozen
peas at any time. A fresh summery recipe, it is great served with fishcakes.

Ingredients

 Serves 4 

2 tbsp oil
10 fresh curry leaves ( finely sliced)
1/2 tsp Mustard Seeds
1/2 tsp Onion Seeds
Salt to taste 
500g peas
Large handful of fresh mint
Large handful of fresh coriander

Instructions 

  1. Heat the oil in a small frying pan. Add the mustard seeds, onion seeds and curry leaves. Cook for 2-3 minutes until the curry leaves have crisped up and the mustard seeds have started to pop.
  2. Add the peas to the pan. Keep stirring until cooked to your liking.
  3. Depending on the desired consistency you can either gently crush some of the peas with the back of a spoon, or blitz with a stick-blender, or leave the peas whole.
  4. In a bowl, mix the peas with the mint and coriander.
    Season with salt to taste before serving.
