Spiced Poached Pears

Serves: 4 | Suitable for vegetarians 

Introduction

These pears make a great dinner party dessert. Once cooked they can be stored in the fridge for a few days and can be eaten warm or cold. Best served with crème fraîche or ice-cream.

Ingredients

 Serves 4

4 pears 
3 Star Anise
2-inch Cinnamon Sticks
1 large pinch Saffron
Zest of 1 lemon
500ml water
125g sugar
Juice of 1 lemon
25g pistachios (roasted and coarsely chopped/crushed)

Instructions

  1. Peel the pears and place in a saucepan with the water to stop discolouring. Add the spices, lemon zest and sugar and bring to the boil.
  2. Simmer gently for about 20 minutes, or until the pears are tender.
  3. Remove the pears from the syrup and keep in a shallow bowl. Return the liquid to the heat and simmer gently to reduce to a thick syrupy texture.
  4. Once thick, add the lemon juice and pour over the pears. Serve with a sprinkling of chopped pistachios and a drizzle of the reduced syrup along with some crème fraîche.
