Spiced Poached Pears
The perfect dinner party dessert.

Introduction
These pears make a great dinner party dessert. Once cooked they can be stored in the fridge for a few days and can be eaten warm or cold. Best served with crème fraîche or ice-cream.
Ingredients

| 4 pears |
| 3 Star Anise |
| 2-inch Cinnamon Sticks |
| 1 large pinch Saffron |
| Zest of 1 lemon |
| 500ml water |
| 125g sugar |
| Juice of 1 lemon |
| 25g pistachios (roasted and coarsely chopped/crushed) |
Instructions
- Peel the pears and place in a saucepan with the water to stop discolouring. Add the spices, lemon zest and sugar and bring to the boil.
- Simmer gently for about 20 minutes, or until the pears are tender.
- Remove the pears from the syrup and keep in a shallow bowl. Return the liquid to the heat and simmer gently to reduce to a thick syrupy texture.
- Once thick, add the lemon juice and pour over the pears. Serve with a sprinkling of chopped pistachios and a drizzle of the reduced syrup along with some crème fraîche.
