Rafi's Tofu and Red Pepper Homestyle Curry recipe

Serves: 2 - 3/4 - 6 Suitable for vegans

Introduction

Rafi’s Homestyle Curry Pack evokes memories of her home cooking, making it the perfect weeknight meal to have with the whole family. 

A beloved blend that boasts warming flavours from a mix of savoury and aromatic spices alongside curry leaves and star anise.

This recipe features in all of Rafi’s cookbooks making it one of the oldest Curry Pack recipes that we have on the menu.

This time we've made a vegan alternative with tofu and red pepper. Tofu is great for adding to curries as it absorbs all the flavours from the spices and sauce.

Ingredients

Serves 2 - 3

Homestyle Curry Pack (Serves 2 - 3) Homestyle Curry Pack (Serves 4 - 6)
175ml water 300ml water
400g tofu 800g tofu
100g red pepper 200g red pepper
30g Creamed Coconut 60g Creamed Coconut
200g (1/2 tin) Tinned Tomatoes 400g Tinned Tomatoes
Coriander to garnish Coriander to garnish
Salt to taste 

Salt to taste 

 

Instructions

  1. Empty the Homestyle Curry Pack into a pan and toast off the spices on a low/medium heat for 5 minutes.

  2. Add water and creamed coconut to the pan and stir. Cook until the coconut is dissolved.

  3. Add the tofu and red pepper and cook for 5 - 10 minutes, occasionally stirring and adding water, if needed.

  4. Add the tinned tomatoes, stir, cover and cook for 10 - 15 minutes.

  5. Season with salt and garnish with fresh coriander. Ready to serve, enjoy!

Rafi Fernandez (1965-2013)

Rafi became an expert in Indian and Malaysian cooking through her and her husband's combined heritage and may travels around the world. She wrote a number of cookbooks and taught many classes to people in her local community. Her love of cooking and of sharing her knowledge was obvious to all who met her, as many of our customers and staff still fondly remember.
