Chai Chocolate Truffles

Makes: 12 - 15 truffles | Suitable for vegetarians 

Introduction

These are lovely served with a coffee at the end of a dinner party or boxed up and
given as gifts.

Ingredients 

 Makes 12 - 15 truffles

1 Chai Masala - left whole, do not grind
300ml double cream
30g salted butter
300g dark chocolate (ideally 70% or more)
5 tsp cocoa powder and 1/2 tsp Cinnamon Powder (mixed together)

Instructions

  1. Chop the dark chocolate and tip into a heat-proof bowl.
  2. Gently heat the cream and whole spice masala mix in a saucepan for 10 minutes.
  3. Tip the hot cream through a sieve over the chocolate and butter and whisk until combined.
  4. Allow to chill in the fridge for 4 hours.
  5. Shape the truffles and roll in the cocoa powder mix.
