Kati Rolls

Introduction
This recipe was inspired by the vibrant street food of Kolkata. They're great fun to make, with an omelette layer which sticks to the bread. Get a couple of different salads, fillings and chutneys and let people dive in and build their own personalised wraps.
Ingredients

4 eggs |
Salt and pepper |
1/4 tsp Ground Cumin |
Oil |
6 Chapatis |
Your choice of filling |
Instructions
- Prepare whatever main filling and garnishes you would like to use.
- Beat together the eggs in a bowl along with a pinch of salt and pepper and the ground cumin.
- Heat a small frying pan with a drizzle of oil. (It is easiest if the pan is around the same size as the breads you are using).
- When nice and hot, add a couple of large spoonfuls of the egg into the pan. Quickly move it around with a spatula so it covers an area about the same size as your breads.
- Leave to cook for about 30 seconds, until the egg is starting to set on the bottom, but is still nice and soft and uncooked on the top.
- Put your bread directly on top of the egg and gently press with a spatula so the bread and egg stick together.
- Leave for another 20–30 seconds and then flip the whole thing over and cook the other side of the bread for 30 seconds.
- When ready remove from the pan, so that it is egg side up. Add your desired filling and garnishes, roll up and scoff away!
- These can be cooked to order or, when the bread and egg are cooked, they can be stacked up and covered with foil until needed.
