Rafi's Plain Boiled Rice Recipe

Serves: 2 - 3/4 - 6 Ready in: 15 minutes 

Introduction

Rice is a really important part of Indian cuisine and it should be given as much thought and time as the main and side dishes you prepare. 

We are often told that people have difficulty with rice and therefore resort to using pre-cooked or easy cook versions. Once you have mastered the technique below you should be able to ensure that you always have good quality, well-cooked rice as part of your meal and understand the importance of it through the amazing taste and texture you achieve.

Rafi was particularly passionate about rice. Being from South India, it formed an important part of her diet and could easily feature in all three meals of the day in some form. 

Ingredients

Serves 2 - 3

 Serves 4 - 6

150g basmati rice 300g basmati rice
250ml water  500ml water
Salt to taste Salt to taste

Instructions

  1. Add the water, rice and salt to a pan and bring to the boil.
  2. Reduce the heat to the lowest setting and cover with a tight-fitting lid.
  3. Cook gently for 12 minutes.
  4. Turn off the heat and leave to stand for 3 minutes.
  5. To serve, fluff the grains gently with a fork.

Rafi Fernandez (1965-2013)

Rafi became an expert in Indian and Malaysian cooking through her and her husband's combined heritage and may travels around the world. She wrote a number of cookbooks and taught many classes to people in her local community. Her love of cooking and of sharing her knowledge was obvious to all who met her, as many of our customers and staff still fondly remember.
