Ma's Paretal Curry Pack (Serves 2 - 3)

This is a Spicebox exclusive, based on a recipe from Rafi’s Mother-in-law. Rafi's in-laws were originally from Kerala, India, but they emigrated to Malaysia in the 1930s. Hence the invention of this dish!

A Malay and South Indian fusion, flavoured with coconut, curry leaves and fennel. A great celebration dish, cooked for Christmas day in the Fernandez family (with 20kg of mutton!).

Storage Information: Store in cool dark place. This Curry Pack has a minimum 3 months shelf life or can be frozen for up to 6 months.

Try it with: Lamb, goat or earthy veg.

1. Empty the pack into a pan with 175ml water, 30g coconut cream and 200g (1/2 tin) chopped tomatoes and 1/2 tsp sugar.
2. Simmer for 10 minutes. Add 500g ingredients of your choice and mix well, cover, and gently cook.
3. Open and simmer for a further 10 minutes.
4. Season and garnish with coriander leaves.

It should be noted that this pack may contain traces of PEANUTS, NUTS, SESAME SEEDS, CRUSTACEANS, SOYA, CELERY, SULPHITES, MILK and other CEREALS containing GLUTEN due to possible cross-contamination.
