An earthy combination of paneer (Indian cheese), peas and tomatoes. Frying the paneer first enhances the overall texture and flavour of the dish.
Origin of paneer: The story goes that centuries ago paneer cheese was invented by accident. A Rajasthani shepherd was travelling across the desert with milk in a camel skin bag but the milk had curdled and compacted into a block with the whey acting as a preservative. He ate the cheese and drank the whey to quench his thirst.
