Sambhar

Serves: 2 – 4 as a side Vegan Vegan

A satisfying South Indian lentil dish, with curry leaves and mustard seeds. We like adding roasted squash, carrot or pumpkin to this dish. For an authentic tang, add a dash of tamarind puree.

Storage Information: Store in cool dark place. This pack has a minimum 3 months shelf life..

  1. Empty sachet 1 (lentils) into a pan with 500ml water, 2 fresh tomatoes and 200g mixed vegetables.
  2. Bring to the boil, cover, and simmer for 10 mins. Adjust water if the mixture is too thick.
  3. Add sachet 2 (powdered spices) and continue to simmer for a further 2 mins.
  4. In a frying pan, fry sachet 3 (whole spices) in 2 tbsp of oil until the mustard seeds begin to splutter.
  5. Pour this mixture over the lentils and vegetables.
  6. Garnish with lemon juice and serve.
