Asafoetida is a bright, sunshine yellow spice obtained from the roots of several species of giant fennel. It has a strong sulphurous smell, but used in small amounts it adds a pleasant savoury flavour reminiscent of onion and garlic. It must be cooked well to get the best flavour and avoid bitterness. It is best stored in a sealed container away from other foods because of its strong taste. Try adding a sprinkle to dhals and other vegetable dishes.
