A hot condiment to perk up any food.
- Soak the dried chillies in 100ml boiling water for 10 minutes.
- Blend all ingredients together, including the water the chillies were soaked in.
- Adjust seasoning to taste.
- Serve with eggs on toast, chips, stir-fries, anything!
Try experimenting with flavours, adding some different dried chillies into the mix, such as chipotle, kashmiri or ancho. All will give a very different finish, and have very different heat strengths! If you want less heat, you can add in tomato puree or fresh tomatoes, or de-seed the chillies before blending.
This sauce will keep for 1 - 2 weeks in the fridge.
