Chilli Sauce

Instructions

  1. Soak the dried chillies in 100ml boiling water for 10 minutes.
  2. Blend all ingredients together, including the water the chillies were soaked in.
  3. Adjust seasoning to taste.
  4. Serve with eggs on toast, chips, stir-fries, anything!

Try experimenting with flavours, adding some different dried chillies into the mix, such as chipotle, kashmiri or ancho. All will give a very different finish, and have very different heat strengths! If you want less heat, you can add in tomato puree or fresh tomatoes, or de-seed the chillies before blending.

This sauce will keep for 1 - 2 weeks in the fridge.
