Coconut rice

This is a typical South Indian rice preparation.

Serves: 4-6 | Ready in: 20

Coconut rice

Instructions

1. Cook the rice.

2. Heat the coconut oil in a large frying pan and fry the mustard seeds, lentils, dry chilli, curry leaves and cashew nuts until the seeds pop and the nuts turn golden brown.

3. Add the creamed coconut, asafoetida, ginger and chilli and fry for a further 3-4 minutes.

4. Add the rice and continue to stir over a medium heat to warm through.

5. Season with salt to taste and serve piping hot.
