Crushed Spiced Peas
A fresh summery recipe, it is great served with fishcakes.
Instructions
- Heat the oil in a small frying pan. Add the mustard seeds, onion seeds and curry leaves. Cook for 2-3 minutes until the curry leaves have crisped up and the mustard seeds have started to pop.
- Add the peas to the pan. Keep stirring until cooked to your liking. Depending on the desired consistency you can either gently crush some of the peas with the back of a spoon, or blitz with a stick-blender, or leave the peas whole. In a bowl, mix the peas with the mint and coriander. Season with salt to taste before serving.
