Fennel, Apple and Cucumber Salad
A mouth-watering coleslaw salad for those hot summer days.
- Julienne the fennel bulbs, apple, carrot and cucumber (cut them into small, matchstick shape pieces) and finely chop the other veg.
- Mix all of the fruit and vegetables together then add the fennel tops and flat leaf parsley.
- Stir in the lemon juice, olive oil and chilli flakes and season well.
- For best results, this salad is best left for an hour before serving for the flavours to marry.
