Guacamole Salad

A perfect summer salad using fresh, raw veg.

Serves: 4-6 | Suitable for vegetarians

Guacamole Salad


  1. Julienne the carrot and cucumber (chop them into small matchstick-like pieces).
  2. Finely chop the tomato, avocado and spring onion.
  3. Mix all your vegetables together.
  4. Add the avocado, lime juice, chilli and olive oil.
  5. Garnish with the spinach leaves and parsley and season with salt and pepper.
  6. For best results, leave for an hour at room temperature before serving.
