Vindaloo is a strongly-flavoured curry which pairs perfectly with mackerel.
- Empty the Vindaloo Curry Pack into the pan with the water, tomato purée, and vinegar.
- Simmer until the dried onion breaks down.
- For best results, leave the sauce to stand overnight.
- Grill the mackerel lightly on both sides and pour the reheated sauce over the top. This will stop the fish breaking up.
- Serve with a lemon garnish alongside rice and fresh green vegetables such as spinach or green beans.
