Mango Sorbet
This is very refreshing and perfect for a hot day!
Instructions
- Tip the mango purée into a wide bowl and place in the freezer to chill for 30 minutes.
- Heat the sugar and the water in a saucepan, mixing until all of the sugar has dissolved. Set aside to cool.
- Once the sugar syrup is completely cooled, add the lime juice and zest and whisk into the very cold mango purée until combined.
- Put this back in the freezer. After one hour, remove from the freezer and whisk for 3-4 minutes. Repeat this twice more.
- Serve plain, or sprinkled with chilli flakes and fresh mint.
