Masala Omelette

This dish is so adaptable, depending on what you fancy.

Masala Omelette

Instructions

  1. Crack the eggs in to a bowl and whisk together with a fork.
  2. Heat the oil in a large frying pan. When hot, add the cumin seeds and fry for 1-2 minutes.
  3. Add the onion and chilli and fry for 4-5 minutes until the onion has softened.
  4. Next, add the tomatoes, turmeric and garam masala, and fry for a further 2 minutes.
  5. Add the eggs, coriander, and a pinch of salt. Mix everything and leave to cook for 4-5 minutes until the eggs are set, but still soft.
  6. Turn it out and serve with crusty bread and some chilli sauce.
