Masala Omelette
This dish is so adaptable, depending on what you fancy.
Instructions
- Crack the eggs in to a bowl and whisk together with a fork.
- Heat the oil in a large frying pan. When hot, add the cumin seeds and fry for 1-2 minutes.
- Add the onion and chilli and fry for 4-5 minutes until the onion has softened.
- Next, add the tomatoes, turmeric and garam masala, and fry for a further 2 minutes.
- Add the eggs, coriander, and a pinch of salt. Mix everything and leave to cook for 4-5 minutes until the eggs are set, but still soft.
- Turn it out and serve with crusty bread and some chilli sauce.
