Our take on chutney from the Andhra Pradesh in central India, Made with peanuts, onions, garlic and spices. It is very moreish and will go with most dishes.
- Heat the 1 tbsp of oil in a pan and gently fry the onion, garlic, ginger and chillies until fragrant (2 minutes). Put in a bowl and keep aside.
- In a pestle and mortar or an electric blender add the peanuts and the onion mixture, the tamarind chutney and lemon juice then blend with a little water to form a smooth paste.
- In a pan heat the 2 tbsp of oil and fry the remaining tempering ingredients on a low heat until the lentils are a golden brown. Pour this mixture over your chutney, mix well and serve.
