Pudlas

A simple Gujarati pancake which is traditionally served for breakfast.

Instructions

1. Add the gram flour to a bowl and whisk to remove any large lumps.

2. Add the onion, ajwain, asafoetida and salt and mix.

3. Add the water slowly to prevent lumps and whisk everything together.

4. When everything is combined you should have quite a thin batter. Cover and leave to rest for 30 minutes.

5. Heat a small frying pan and when hot, add a little oil. Pour in one ladle of the batter and swirl around the pan (just like pancake day!). Let it cook for 1-2 minutes until the top has just set. The underneath should be golden and should come away from the pan. Flip it over and cook the the other side for another 1-2 minutes.

6. Remove from the pan and wrap in some foil to keep warm.

7. Repeat the process with the rest of the batter, adding a drop of oil between each pancake, to stop them sticking.
