Quick Pickled Cabbage

This is a fresh pickle, it's designed to add crunch and to cut through richer flavours. Red cabbage also works well for this recipe. Don't be afraid to add more vinegar/sugar/salt to suit your tastes. It will taste even better if you are able to leave it to sit for a couple of days.

Serves: 4 - 6 (as a side) | Suitable for vegetarians

Quick Pickled Cabbage


  1. Add the turmeric, chilli powder, salt, sugar and cider vinegar to the cabbage.
  2. Massage/scrunch together the dressed cabbage for 2-3 minutes until fully combined.
  3. In a frying pan, heat the oil and fry the mustard seeds until they start to pop.
  4. Pour over the cabbage, mix well and leave to sit for at least 2 hours, preferably overnight.
