Roast Squash
We love to roast squash as it really intensifies the flavour.
Instructions
- Preheat the oven to 190C/gas 5.
- Chop the butternut squash into chunks, leaving the skin on.
- Grind the spices in a pestle and mortar.
- Mix the oil, spices and butternut squash together until well coated.
- Tip onto a roasting tray and roast for 45-50 minutes, until the edges of the squash are crisp.
