Runner Beans, Spring Onions & Spinach in an earthy curry sauce

Here's an alternative (vegan) use for our Mattar Paneer Curry Pack - a lovely, light Summer side dish!

Serves: 4-6

Runner Beans, Spring Onions & Spinach in an earthy curry sauce

Instructions

  1. Empty pack into a pan with 1 finely chopped onion and 2 tbsp oil. Fry until the onion is soft.
  2. Add 200g (1/2 tin) chopped tomatoes and continue to fry until oil separates.
  3. Add your runner beans, spring onions and spinach and cook until tender.
  4. Season and serve immediately with a garnish of mint.

Try substituting your tinned tomatoes for 4 fresh chopped tomatoes - this gives a fresher taste to the dish and leaves it much drier.
