Spiced Cucumber and Mint Raita

Ian's recipe for a fresh yoghurt salad.

Spiced Cucumber and Mint Raita


  1. Grate the cucumber and finely chop the mint.
  2. Stir these into the yoghurt with a pinch of salt to taste.
  3. Heat the oil in a frying pan, then tip in the spices. Once the mustard seeds start crackling, tip the oil and the spices over the yoghurt and immediately cover.
  4. When ready to serve, fold it all together. This works really well as a dip for bhajias or kebabs.
