Spiced Cucumber and Mint Raita
Ian's recipe for a fresh yoghurt salad.
- Grate the cucumber and finely chop the mint.
- Stir these into the yoghurt with a pinch of salt to taste.
- Heat the oil in a frying pan, then tip in the spices. Once the mustard seeds start crackling, tip the oil and the spices over the yoghurt and immediately cover.
- When ready to serve, fold it all together. This works really well as a dip for bhajias or kebabs.
