Spiced Scrambled Eggs

Great for brunch, lunch or a light dinner.

Serves: 2

Spiced Scrambled Eggs


  1. Heat the butter in a pan. Add the onion, tomato, chilli and cumin seeds and fry for 5 - 10 minutes until soft.
  2. Add the turmeric, salt and pepper and fry for 1 minute.
  3. Turn the heat down and add the eggs. Cook slowly, stirring gently and continuously, breaking up any lumps.
  4. When the eggs are soft and scrambled, add the coriander and check the final seasoning.
  5. Serve on toast or with chapatis.
