Tamarind Roasted Salmon

Asian-style salmon fillets with lemongrass and tamarind.

Tamarind Roasted Salmon


  1. Mix together the tamarind chutney, lime juice, lemongrass and chilli. Deseed the chilli for a milder dish.
  2. Spread a thick layer of the sticky marinade over each salmon fillet.
  3. Allow to marinate for 30 minutes and then roast in a preheated oven (180 C) for 8 - 12 minutes until the flesh of the salmon is opaque all the way through.
  4. Garnish with lots of fresh coriander and lime wedges.

In the summer months, this tasty dish can also be cooked on the BBQ.
