Tamarind Roasted Salmon
Asian-style salmon fillets with lemongrass and tamarind.
- Mix together the tamarind chutney, lime juice, lemongrass and chilli. Deseed the chilli for a milder dish.
- Spread a thick layer of the sticky marinade over each salmon fillet.
- Allow to marinate for 30 minutes and then roast in a preheated oven (180 C) for 8 - 12 minutes until the flesh of the salmon is opaque all the way through.
- Garnish with lots of fresh coriander and lime wedges.
In the summer months, this tasty dish can also be cooked on the BBQ.
