Tomato, Lentil and Courgette Soup
A light and refreshing soup packed full of summery flavours.
- Add the lentils to a saucepan with the tomatoes, turmeric and the water or stock. Bring to the boil and simmer covered for 8 - 10 minutes or till the lentils are tender.
- Take the pan off the heat, add the courgette and leave to stand for 2 minutes. Add salt to taste.
- In a frying pan, heat the oil then fry the chillies, garlic and curry leaves gently for 1 - 2 minutes.
- Empty into a blender or pestle and mortar and grind to a smooth paste. Drizzle this over portions of the soup and garnish with spring onion.
