Tomatoes On Toast

A favourite breakfast/brunch meal. It is super quick, tasty and
healthy!

Tomatoes On Toast

Instructions

  1. Heat the oil in a large frying pan, and when hot add the curry leaves and panch pooran and fry for 1 minute.
  2. Add the garlic and continue frying until the garlic just starts to go golden around the edge.
  3. Add the tomatoes (the moisture should stop the garlic going from golden to burnt!) and mix well. Fry for 2-3 minutes.
  4. Squeeze in a little lemon juice and season well with salt.
  5. To serve, squash the tomatoes on top of your toast and garnish with the coriander.
