Tomatoes On Toast
A favourite breakfast/brunch meal. It is super quick, tasty and
healthy!
Instructions
- Heat the oil in a large frying pan, and when hot add the curry leaves and panch pooran and fry for 1 minute.
- Add the garlic and continue frying until the garlic just starts to go golden around the edge.
- Add the tomatoes (the moisture should stop the garlic going from golden to burnt!) and mix well. Fry for 2-3 minutes.
- Squeeze in a little lemon juice and season well with salt.
- To serve, squash the tomatoes on top of your toast and garnish with the coriander.
