Root Vegetable & Chickpea Rogan Josh
This vegan recipe is perfect for using up your leftover vegetables.
Instructions
Empty the Rogan Josh Curry Pack into a pan and toast off the spices on a low/medium heat for 5 minutes.
Add water and creamed coconut to the pan and stir. Cook until the coconut is dissolved.
Add the tomato puree, passata and sugar. Stir, cover and cook for 5 - 10 minutes.
Add the carrots, chickpeas, potatoes and simmer for 30-40 minutes until the vegetables are cooked. You might need to add more water halfway through to avoid the curry drying out as these vegetables don’t release a lot of moisture.
At this stage, add the green pepper, season with salt and cook for 5 minutes.
Garnish with a squeeze of lemon juice if desired. Ready to serve, enjoy!
